Would the Panzer I and II be able to be landed by Glider?

The Me-321 (first flight early 1941) was designed to carry 120 men or vehicles up to a Pzkw IV. The later powered version (Me-323) certainly carried trucks and there is a picture showing a Marder allegedly unloading.

On the other hand the Me 321 required 3 x Me-110 or two Heinkel IIIs welded together as tows and long concrete runways to take off and long airfields to land at.

I was thinking more of a design nearer the Hamilcar glider- did the germans ever design anything along the lines of that?

Other than the Me321, the short answer is no. The Hamilcar needed a 4 engine heavy bomber as a tow (obsolete Stirlings were largely used by the RAF). The Germans didn't have any spare 4 engine aircraft for a similar role and after 1942 were on the strategic defensive anyway, so didn't put the effort into developing large gliders. For a "what if", the Me 321 would be the most realistic.
